I was able to build a seaside village with your help. That village had many of the ideas you suggested. But now I'm looking at continuing on in my quest. I am leaving that village behind via railroad, and I'm looking at building an early 1900's era city. What sorts of businesses might you expect to find in such a place?

(Please note: This was a repurposed thread. Many of the comments below are referring to that seaside village, and some of those suggestions were used in Dockside, a tabletop arcade game.)

Re: Types of businesses in a seaside village?
Fish receiving market. Obviously by the water. Busy in the very early morning.

One or more of
- Icehouse. Manufacture or store large volumes of ice.
- Salt manufacturer. Used to pack fish for long storage.
- Smokehouses. Used to smoke fish.

Depending on the main fishery, there may be coopers (if that's how they store the ships).

Fishmongers. Small vendors; some specialization.

Chandlers. Lots. Specialized.

Sail lofts. Where they make and repair them.

Rope walk. Where they make cordage. Usually a long building (look up "cable length").

Brewery/distiller.

Lighthouse.

Churches. Seamen liked going to church. Even though they weren't particularly religious while at sea.

Large format forge. Anchors and chains. Also some long bolting, hoops, etc. Probably mostly for repair in a smaller village.

If the town supports a specialized sea industry (whaling, salvage, military) there will be specialized businesses to support them.

Old sailor's home. Lots of widows and orphans.

Boatwright. For making dories and smaller craft.

In medium towns there probably will be some sort of medium-sized "dry dock" ability. This may simple be a good careening beach, but could also be some method of using tides and floats to get medium-sized ships up out of the water. Larger towns will be able to handle larger ships. This is a very difficult, major process, so smaller towns won't have anything like it.

Obviously the town will be established around a serviceable cove/bay/inlet. There will be multiple docks or wharves (probably both). There may be a manufactured or natural breakwater. Quite often, towns will be built where a river flows into the sea as these regions make ideal harbors (until modern times when boats draft too much for them). These regions will also probably have specialized fisheries and dual industries (fresh water/river vs. salt water/sea).

From the middle of the XIXth century onward :

Boarding house for tourists
Lifeboat station, with launching ramp
Customs post, watchposts, and seashore patrol path
Receiving station for oceanic telephone cables
Beach cabins (sometimes on horse-pulled carts, to bring the ladies to the sea)

Bookstore. You always need things to read while you’re relaxing. Make creepy if necessary.

Ditto on ice cream. You could do shaved ice, a malt shop, or a soda jerk too.

Hot dog cart. With umbrella.

Kite shop. Also sells frisbees, smashball, and other beach toys.

Surfboard rental.

Beachwear clothing store. Itsy bitsy teeny weenie yellow polka dot bikinis mandatory.

Real estate agency. Double as a property manager for vacation rentals.

Art galleries of all kinds. Carved driftwood especially.

Museum or ranger station dedicated to the history of the natives who lived their before foreign settlers took over.

Re: Types of businesses in a seaside village?
Hey all. Thanks so much again for your tremendous help. It resulted in a very expansive board game endeavor. (For those of you who play board games you may want to check out the free print&play download [here]...)

That said, since this part was complete, I will be repurposing this thread. (See OP.)
