Hi John,
Let me try to give some opinions here...

1. The box says that you can lvl up to lvl 5. How is this possible since there are only two campaigns?
For Pathfinder there are thousands of adventures! And those are just the published ones. You can create your own - as a Dungeon Master / Game Master you can create any world and adventure you like. But there are plenty of good published ones. Some are even free... a good one to start with might be D0: Hollow's Last Hope which is freely downloadable from Paizo. They also have an extended campaign in their free GMs Kit on the website (if you didn't get it already): http://paizo.com/beginnerbox
Next, look at all the Pathfinder Adventure Path campaigns in our database and see if any strike your fancy. There are lots of stand alone modules as well... plus all the D&D 3.5 material to cover every level from 1 to 20 many times over. The Beginner Box will handle levels up to level 5 so most of the entry level adventure path material and modules up to level 5 will work fine. Most people never play the same adventure twice - excepting only to revisit an old adventure from their youth.

2. Does a person focus on playing one character through multiple campaigns or do they create new ones each time?
This is up to each person and the group they play in. Most of us play the same character until they either (1) die, (2) the campaign ends or (3) the players tire of the character and want to try something new. That usually means playing the same character for anywhere from 1 adventure to dozens... most players prefer to invest in a character, have them grow and gain new awesome powers and abilities and generally get fleshed out over a longer campaign (weeks or months or even years).

3. Can anyone point me in the direction of other resources to help with 1 GM, 1 PC games? In a related note, are we fighting a losing battle by not having many players?
One of the best are the One on One Adventures Compendium which are almost a dozen high-quality adventures for 1GM and 1 Player... but it requires Pathfinder Core since many of the adventures and rules are outside the scope of the Beginner Box. Still, at least one or two of those lower-level adventures could be used by the Beginner Box. Pathfinder is always going to be a little more fun with at least 3 (1GM and 2 players) and really starts to shine with 1GM and 3 or 4 players.
I'm sure others will have some opinions and suggestions for you. Good luck!
