I'm going to be running some Call of Cthulhu for my group on off nights when our current GM can't run his ongoing Rubble and Ruin game. Since it could be weeks between occasional sessions, we'd like to do scenarios that can be completed in a 3-4 hour session.
I'd like to put together a list of options. Any suggestions?

There is a boatload of options available for Cthulhu one-shots. As a rule of thumb, any published scenario below 20 pages can be run in 4 hours (give or take). This also depends on your players. If they are the kind of players that will check out every detail, sessions will go longer compared to players who go in guns blazing.
Creating a full list will be a lot of work, but maybe I'll create a geeklist after the mountains of madness game (including a short synopsis).

Strange Little Girl and St. Swithun’s Hole from the Avalon: The County Of Somerset book should be completable in the length of session you suggest, though the first in particular may take longer if the investigators get distracted.

One of my favorites is Finger Biter, but I think we actually did 2 sessions over it, but I think it's playable in 1.
A little bit of knowlegde is a great one session game that is based on the herbert west story.

I'd recommend all of the ones that have been previously mentioned. I'd point out the book Secrets too - all of the scenarios in there are easily one-shots.

Thanks for all the excellent suggestions! I have Mansions of Madness, and with the free downloads mentioned I should have lots of options it looks like.
