What do you gms do track the status of conditions (like stunned) on monsters? Just pencil and paper?

I use pencil and paper. I make a note beside the creature's stat block that says "stunned" or whatever.

I've seen people use different kinds of status markers at conventions. Those are really useful and they look neat but since I don't use miniatures, I haven't invested in them.

I use Alea Tools magnetic markers. They are the coolest RPG gadget since dice! I have spent WAY too much money buying sets of them for other games as well. I can't recommend them enough!

(If you do decide to get some of these, drop me a PM...I have a discount code I won't be using since it expires before I plan to buy more.)

I use them under minis, but also use them along with these awesome Acrylic stands from Litko. It makes a really nice looking table!

I use coloured glass beads. They are very versatile and can be subsitituted for all different kinds of games.

Chessex makes a bunch, but other companies do as well...

For me the best solution by far is what my DM does. He bought a box a mini hair rubbers in various colours and we use them to track statuses. Red for bloodied etc

It's super-super fast to put on and take off, doesn't fall of, you don't have to attach magnets underneath, one size fits all, you don't have to watch how you handle it and your mini will wear it with pride

Photo will follow as soon as my DM sends me one (which was rather quickly)

The guy in the middle is bloodied (red one) and if I can remember correctly also marked by our fighter (grey one)

Also this was part of the encounter that my awesome minotaur found his magical flying boots thumbsup
