First off, I'm only familiar with 6th ed. CoC.
I see that 2nd ed- 6th ed are all listed in the same group, but 1st ed is it's own group, what are the major changes between 1st and 2nd ed, and why did they make a 3rd- 6th editions if 2nd- 6th editions are that similar? Finally, if 2nd- 6th eds. are that similar, can a person use books (etc.) made for 2nd- 5th editions with 6th edition?

It's my impression that all books aside from some which may be SOLELY written for d20 (many are d20/BRP) will work with 6th Edition. I haven't noticed any major changes.

It is a bit more than 2nd to 6th there are also a 5.5, 5.6, 20th anniversary, Miskatonic University and 25th anniversary editions. Many, maybe most, people don't upgrade their CoC rulebook to a new edition until it falls apart.
The main differences between anything post 1st edition, are various corrections, different layout, extra fluff, different sample adventures.
The 1st edition differs from the rest in a few minor areas (HP are one - 1st ed. characters are tougher) but the rules are essentially the same.
As baradifi said anything post 1st edition can be used with 6th edition. It is also possible to use 6th edition supplements with older editions of the core rules.

The 2nd through 6th editions also saw some skill changes, such as Botany and Chemistry disappearing.
There was also the removal of Spell Multipliers from tomes between the 5th and 6th editions.
If you have the 2nd edition book, there's no real reason to upgrade. Just be prepared to do minor conversions on any new scenario books you buy. Nothing major, but something to be aware of.

I disagree about not needing to update from second edition. I believe the many changes to skills are a pain to deal with, especially those regarding Medicine which have been combined. Some have been renamed, some have been retooled, some have been removed, and new ones added... I believe many of the starting skill levels (base points) have changed as well. Also, didn't skill increases from experience go up from a d6 to a d10?
The sanity rules have also been significantly improved, going from "roll a random phobia" in 2nd edition, to "work with the player to select an appropriate insanity from this detailed list" in 6th.
My favorite improvement has been the collection and balancing of ALL prior printed spells, available in the 6th edition. The monster list has also grown over time, but isn't quite as impressive an increase. Oh, and the new layout just looks cool!

Actually, it looks like we're looking at it backwards. The OP has 6th edition and wants to know if the older supplements will be easy to understand.
Yes. Nothing should stand in your way of picking up an older scenario book and running with it almost as is.

Argh, I really must start remembering to look at content of posts, and not just the words...

Yes, it should be much easier to run old adventures with the new rules, rather than the other way 'round. Really, all you'll need to do is some skill conversion (in the rare cases that it even comes up), again with Medicine as the main culprit.
